Honey-cake / Ginger bread - Piernik

Etymology of the word "piernik" is not so hard to understand - "pierny" is a word used in old-polish to express something that is spicy, over-peppered. Piernik is a traditional kind of cake baked mostly before Christmas (even a week or so). It uses a lot of flavorful spices (for me the more the better) such as pepper, nutmeg and cloves - because of that it is similar to ginger bread well known around the world.

Presented Piernik tastes far more better than famous gingerbread cookies from Toruń (I lived in the city for few years).





Ingredients (1 small cake tin; double the amount for tin with 24cm diameter)

  • 2 glasses of flour
  • 2/3 glass of sugar
  • 3/4 teaspoon of baking soda
  • 3/4 teaspooon of baking powder
  • 1/2 teaspoon of salt

          Spices:
  • 1-2 teaspoons of cinamon powder
  • 1/2 teaspoon of nutmeg powder
  • 1/2 teaspoon of cut cloves
  • 1/2 teaspoon of pepper powder 
  • I often use also ginger powder - 1/2 or 1 teaspoon

  • 1/2 glass of oil
  • 1/2 of youghurt/sour milk or sour cream
  • 4 table spoons of liquid natural honey
  • 1 egg


Mix all dry ingredients in one pot and all liquid ingredients in another then combine them together and pour to cake tin. Bake in 170* C for about 1 hour (or more if you use doubled amount of ingredients).

Cool down the cake, cut it in half  and then spread a jam on the top of one of the halves. Pour liquid chocolate on top of the cake.
